Our Story

This is Gab's newest morning blend, and it follows her golden smoothie rule: no banana-heavy, chalky protein shakes. Medjool dates do the sweetening, the spinach disappears completely behind the strawberries, and between the collagen, PB powder, and chia seeds it quietly packs over 30 grams of protein. One blender, five minutes, and breakfast is handled.

Ingredients

For the smoothie

  • 3 Medjool dates, pitted

  • 1 to 2 cups fresh spinach

  • 1 cup frozen strawberries

  • 1/2 banana

  • 1 cup unsweetened almond milk, plus more for a thinner smoothie

  • 2 scoops collagen peptides

  • 2 tbsp PB powder

  • 1 tbsp chia seeds

  • 1 to 2 tsp honey, optional, depending on how sweet your dates are

  • 1/2 to 1 cup ice, optional, if using fresh strawberries

Instructions

  1. Add the almond milk to the blender first, then the dates and spinach.

  2. Add the strawberries, banana, collagen, PB powder, chia seeds, and honey if using.

  3. Blend until completely smooth, about 60 to 90 seconds.

  4. Add more almond milk a splash at a time if you like a thinner smoothie.

What We'd Change Next Time

If your dates are soft and fresh, skip the honey entirely, they carry the sweetness on their own. Frozen strawberries make it thicker and colder than fresh, so drop the ice if you use them. And add the extra almond milk a splash at a time; it goes from thick to thin fast.

One large smoothie: roughly 550 calories, 30 to 35g protein, and 12 to 15g fiber, plus vitamin C, potassium, iron, calcium from fortified almond milk, and omega 3s from the chia seeds. This is an estimate and will shift with your dates, milk, and add-ins.
