Banana Protein Bites

Our Story

These are the snack Gab makes when the bananas on the counter are getting a little too ripe and she does not want to waste them. They are soft, easy on the stomach, and perfect to grab from the fridge between meals. No oven, one bowl, and they keep all week. Straight from Gab's Substack to the permanent rotation.

Ingredients

For the bites

  • 2 very ripe bananas, mashed (the riper, the better)

  • 1 1/2 cups rolled oats

  • 3 tablespoons peanut butter powder

  • 2 to 3 tablespoons nut butter (peanut or almond), for binding

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • Pinch of salt

Optional add-ins

  • Mini dark chocolate chips

  • Chopped walnuts

Instructions

  1. Mix the base. Mash the bananas well in a bowl until mostly smooth. Stir in the oats, peanut butter powder, nut butter, cinnamon, vanilla, and salt.

  2. Adjust the texture. Mix until the dough is thick and sticky. Too wet? Add a little more oats. Too dry? Add 1 to 2 tablespoons of milk or yogurt until it comes together.

  3. Chill and roll. Chill the mixture 15 to 20 minutes so it is easier to handle, then roll into bite-sized balls. Fold in chocolate chips or walnuts first if using.

  4. Store. Keep in the fridge for up to 5 days, or freeze for later. They stay soft but hold their shape chilled.

What We'd Change Next Time

The riper the bananas, the better these turn out. Customize with mini chocolate chips or chopped walnuts, and keep them chilled so they stay soft but hold their shape.
