Ham & Cheddar Egg Cups

Our Story
These are one of those breakfast recipes that feel a little fancy but take almost no effort. A slice of ham becomes the cup, cheddar melts underneath, and the egg bakes right on top with tomato and fresh basil. They are great fresh out of the oven and just as good reheated, which makes them perfect for busy mornings and meal prep weeks. Another one from Gab's Substack that earned a permanent spot.

Ingredients
For the egg cups
12 slices ham
3/4 to 1 cup shredded cheddar cheese
12 large eggs
1/2 to 3/4 cup chopped tomatoes (seeds removed if they are juicy)
Fresh basil, thinly sliced or torn
Salt and black pepper
Nonstick spray or oil for the pan (optional)
Instructions
Prep the pan. Preheat the oven to 375F and lightly grease a 12-cup muffin pan so the egg cups release easily.
Build the cups. Press one slice of ham into each muffin cup, shaping it into a little bowl. Sprinkle cheddar evenly into the bottom of each ham cup.
Add the eggs. Crack one egg into each cup, directly on top of the cheese.
Top. Spoon a little chopped tomato over each egg.
Bake. Bake for 12 to 15 minutes, until the whites are set and the yolks are mostly firm with just a little softness on top.
Finish and serve. Top immediately with fresh basil, season with salt and pepper, and let rest 2 minutes. Gently lift out of the pan and serve warm with fruit or toast.

What We'd Change Next Time
If you prefer fully set yolks, bake them 1 to 2 minutes longer. Blot juicy tomatoes first so the cups do not get watery. They reheat really well, just warm them gently so the eggs do not overcook.
