Ham & Cheese Croissant Sandwich Bake

Our Story
This is one of those cozy bakes that feels perfect for mornings when you want something warm and comforting without standing over the stove. Torn buttery croissants soak up a Dijon custard with ham and two cheeses, then bake until puffed and golden. Gab makes it for brunch, holidays, and anytime we have people staying over, and you can build it the night before and just bake in the morning.

Ingredients

For the base
4 large butter croissants, torn into big pieces
1 1/2 cups diced cooked ham
1 1/2 cups shredded Swiss and cheddar blend
For the custard
5 large eggs
1 cup whole milk
1/2 cup heavy cream
1 tablespoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
For the finish
2 tablespoons chopped chives or green onion
Optional extra cheese for topping
Instructions
Preheat the oven to 375F and lightly grease an 8x8 baking dish.
Scatter the torn croissant pieces evenly in the dish. Sprinkle the ham and shredded cheese throughout so every bite has a little of both.
In a bowl, whisk together the eggs, milk, cream, Dijon, garlic powder, salt, and pepper until smooth.
Pour the custard evenly over the croissants and gently press everything down so the bread absorbs the mixture without flattening it. Let it sit 5 to 10 minutes to soak.
Sprinkle a little extra cheese on top for a more golden finish, then bake 30 to 35 minutes, until puffed, lightly browned, and set in the center.
Rest 5 minutes, finish with chives or green onion, and serve warm with fruit on the side.

What We'd Change Next Time
Prep it ahead and refrigerate overnight, then bake in the morning. For a slightly lighter version, swap some of the cream for milk. Leftovers reheat really well.
