Garlic Herb Chicken Meatballs with BBQ Mayo Sauce

Our Story
These were supposed to be ground chicken burgers, right up until they completely fell apart while we were forming the patties. Instead of forcing it, we added another quarter cup of panko, rolled everything into meatballs, and baked them. Best pivot of the night. The Meat Church garlic and herb played perfectly with the Better Burger seasoning, and a simple BBQ mayo dip tied it all together. Honestly, we liked these better than the burgers would have been, and we might just make them as meatballs from the start next time.

Ingredients
For the meatballs
1 lb ground chicken
1 egg
1/2 cup panko breadcrumbs (we needed an extra 1/4 cup to help it hold together)
Maplewood Meats Better Burger Seasoning, to taste
Meat Church Garlic & Herb Seasoning, to taste
For the BBQ mayo sauce
Smash Kitchen Organic Real Mayonnaise
Primal Kitchen Unsweetened Classic BBQ Sauce
Mix about equal parts until smooth, then adjust to taste
Instructions
Preheat the oven to 400F and line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, egg, panko, Better Burger Seasoning, and Meat Church Garlic & Herb.
Mix until just combined. If the mixture feels too soft to shape, add a little more panko until it holds together.
Roll into golf-ball-sized meatballs and place on the prepared baking sheet.
Bake for 18 to 22 minutes, until the internal temperature reaches 165F. (Ours finished closer to 180F and were still juicy.)
Let rest for 5 minutes.
While they rest, whisk together the BBQ sauce and mayo for an easy dipping sauce. Serve with the BBQ mayo and your favorite veggies or side.

What We'd Change Next Time
Skip the burger detour and roll them as meatballs from the start. A little chopped fresh parsley on top would not hurt either.
