Buffalo Chicken Sliders

Our Story
Easy, spicy, and always a hit. These sliders are one of Gab's go-tos when she needs something quick, flavorful, and filling without being stuck in the kitchen all day. Shredded buffalo chicken, melty pepper jack, and a light cabbage slaw for crunch, all baked on Hawaiian buns until golden. They came over from her Substack and they never make it to leftovers.

Ingredients
For the buffalo chicken filling
3 cups shredded cooked chicken
1/2 cup buffalo sauce
1 tablespoon ranch dressing
3/4 cup shredded pepper jack cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
1/4 teaspoon black pepper
1/4 teaspoon cayenne (optional, for extra heat)
3/4 to 1 teaspoon kosher salt
For the quick cabbage slaw
1 1/2 cups cabbage slaw mix
1 teaspoon apple cider vinegar or lemon juice
1 teaspoon olive oil
Generous pinch of salt
For the buns and finish
8 to 12 Hawaiian slider buns with sesame seeds
2 tablespoons avocado oil
Flaky salt, for topping
Instructions
Make the buffalo chicken. In a large bowl, combine the shredded chicken, buffalo sauce, ranch, pepper jack, garlic powder, onion powder, smoked paprika, black pepper, cayenne (if using), and salt. Mix until evenly coated.
Prep the slaw. In a small bowl, toss the cabbage with the vinegar (or lemon juice), olive oil, and a pinch of salt. Keep it light, it is just for crunch.
Assemble. Place the bottom halves of the slider buns in a baking dish. Spread the buffalo chicken mixture evenly over the buns, add a light layer of slaw, and place the top buns on.
Bake. Brush the tops with avocado oil and sprinkle with flaky salt. Bake uncovered at 375F for about 10 minutes, until the cheese is melted and the tops are lightly golden. Serve warm with extra ranch or blue cheese, chips, fries, or a simple salad.

What We'd Change Next Time
For extra melt, sprinkle a little more pepper jack on top of the chicken before adding the bun tops. Keep the slaw light, too much will steam and soften the buns. And the heat is easy to dial up or down with the buffalo sauce and cayenne.
