Buffalo Chicken Stuffed Peppers

Our Story
Gab made these on a night we were craving buffalo chicken dip but wanted it to count as a real dinner, and they immediately earned a repeat spot. The creamy filling has shredded chicken, chickpeas, cabbage, and carrots folded right in, so it eats like the dip while sneaking a pile of vegetables past everyone at the table. Melty mozzarella on top, a ranch drizzle at the end, and the sweet bell peppers keep the buffalo heat right where we like it.

Ingredients
For the peppers
3 bell peppers, halved and seeds removed
For the buffalo chicken filling
2 cups cooked shredded chicken
1 cup chickpeas, drained and rinsed
1 cup shredded cabbage
1/2 cup shredded carrots
4 oz cream cheese, softened
1/4 cup ranch dressing
1/4 cup buffalo sauce, plus more for serving if desired
For topping and serving
1 cup shredded mozzarella cheese
Ranch dressing, for drizzling
Fresh parsley, chopped, for garnish
Instructions
Preheat the oven to 400F. Place the halved bell peppers in a baking dish.
In a large bowl, combine the shredded chicken, chickpeas, cabbage, carrots, cream cheese, ranch dressing, and buffalo sauce. Mix until everything is evenly coated.
Spoon the buffalo chicken mixture into each pepper half.
Top generously with shredded mozzarella cheese.
Bake for 30 to 35 minutes, or until the peppers are tender and the cheese is melted and lightly golden.
Finish with a drizzle of ranch dressing and a sprinkle of fresh parsley before serving.

What We'd Change Next Time
Add extra buffalo sauce on top if your crew likes more heat, or serve with celery sticks on the side for the classic buffalo chicken pairing. The filling can be mixed a day ahead and kept in the fridge, so all that is left at dinner time is stuffing the peppers and baking.
