Feta Cauliflower One Pot Soup

Our Story

This is one of those soups that feels a little elevated but is still simple enough to throw together on a normal night. Everything happens in one pot: the chicken simmers right in the broth with cauliflower and roasted red peppers, then feta, mascarpone, kale, and lemon turn it creamy and bright at the end. Cozy but still fresh, and even better reheated the next day. Another keeper from Gab's Substack.

Ingredients

For the base

  • 1 tablespoon avocado oil

  • 1/2 yellow onion, diced

  • 3 cloves garlic, minced

  • 1 small head cauliflower, chopped

  • 1 jar roasted red peppers, drained and chopped

  • 1 1/2 to 2 pounds boneless, skinless chicken thighs

For the seasoning

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried oregano

  • 1 teaspoon sea salt

  • 1/2 teaspoon black pepper

  • Pinch of red pepper flakes

  • 2 to 3 cups chicken broth

For the finish

  • 1 cup kale, chopped

  • 1/2 cup crumbled feta or goat cheese

  • 1/2 cup mascarpone or cream

  • Juice of 1/2 to 1 lemon

Instructions

  1. Heat the avocado oil in a large pot over medium heat. Add the diced onion and cook 3 to 4 minutes until softened. Stir in the garlic and cook another minute.

  2. Add the cauliflower, roasted red peppers, chicken thighs, smoked paprika, oregano, salt, pepper, red pepper flakes, and chicken broth. Stir everything together.

  3. Cover and simmer 12 to 15 minutes, until the chicken is fully cooked and tender.

  4. Remove the chicken, shred it, then return it to the pot.

  5. Stir in the kale, feta or goat cheese, mascarpone or cream, and fresh lemon juice. Simmer uncovered 5 to 8 minutes, until slightly thickened and the kale is wilted.

  6. Taste and adjust seasoning, then serve warm in big bowls, on its own or with bread to soak up the broth.

What We'd Change Next Time

Use goat cheese if you want a slightly tangier flavor, and adjust the lemon depending on how bright you want it. This reheats really well and the flavors come together even more the next day, so it is a great make-ahead dinner.
